Recipe (15 servings)

Peel the cassava, remove the strands inside and grate it.
Open the coconut, separate the meat and grate it too.
Grate the Costeño cheese.
In a large bowl mix the cassava with the sugar, cheese, anis, and coconut. To the mixture add 30 grams of butter and the eggs and knead by hand.
With the rest of the butter, grease a mold.
Put the dough in the mold and put it in the preheated oven and bake for approximately 40 minutes at 180°c.​

900g cassava

150g of Costeño cheese  Bajo Grande

1 coconut

2 eggs

120g whole cane sugar or panela

40g butter

10g Anis
